Ingredients
  

For the Wraps
  • 1 cup cottage cheese full fat recommended for best texture
  • 2 large eggs
  • 1 tablespoon psyllium husk powder or oat fiber
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder optional

  • Non-stick skillet
  • Spatula

Method
 

  1. Combine cottage cheese, eggs, psyllium husk powder, salt, and garlic powder (if using) in a blender. Blend until smooth and well combined.
  2. Heat a non-stick skillet over medium heat. Lightly grease the skillet if needed.
  3. Pour about 1/4 cup of the batter onto the hot skillet to form a thin wrap. Cook for 2-3 minutes until the edges start to lift and the bottom is lightly golden.
  4. Carefully flip the wrap with a spatula and cook for another 1-2 minutes until cooked through.
  5. Repeat with the remaining batter, making about 4 wraps.
  6. Serve warm with your favorite fillings.

Notes

These wraps are best served fresh. You can store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet or microwave.
