Ingredients
  

For the Cookies
  • 1 cup cottage cheese full fat recommended
  • 1 scoop vanilla protein powder whey or plant-based
  • 1/4 cup almond flour
  • 1 tsp baking powder
  • 1 tbsp sweetener e.g., honey, maple syrup, or sugar substitute
  • 1 tsp vanilla extract

  • Parchment paper

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, protein powder, almond flour, baking powder, sweetener, and vanilla extract. Mix until well combined.
  3. Drop rounded tablespoons of dough onto the prepared baking sheet.
  4. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  5. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

You can add chocolate chips, nuts, or dried fruit to the dough for extra flavor and texture. Store cooled cookies in an airtight container at room temperature for up to 3 days.
