- In a bowl, combine cottage cheese, eggs, flaxseed meal, baking powder, and salt (if using). Mix well with a fork until smooth.

- Pour half of the batter into the hot skillet to form a flatbread. Cook for 4-5 minutes per side, until golden brown and cooked through.
- Repeat with the remaining batter to make the second flatbread.
