Ingredients
  

  • 1 cup cottage cheese full fat recommended
  • 2 large eggs
  • 1 tablespoon flaxseed meal or chia seeds
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt optional

Method
 

  1. In a bowl, combine cottage cheese, eggs, flaxseed meal, baking powder, and salt (if using). Mix well with a fork until smooth.
  2. Heat a non-stick skillet over medium heat. Lightly grease if needed.
  3. Pour half of the batter into the hot skillet to form a flatbread. Cook for 4-5 minutes per side, until golden brown and cooked through.
  4. Repeat with the remaining batter to make the second flatbread.
  5. Serve warm with your favorite toppings.
