Cottage Cheese Chicken Parm Bowl

A quick and easy chicken parmesan bowl using cottage cheese for a creamy sauce.

Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts chicken breasts cut into 1-inch pieces
  • 1/2 cup breadcrumbs panko or regular
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg beaten
For the Sauce
  • 1 cup cottage cheese full fat recommended
  • 1/4 cup marinara sauce
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste salt and pepper
For Serving
  • 2 cups cooked pasta or zucchini noodles
  • 2 tablespoons shredded mozzarella cheese
  • Fresh basil chopped fresh basil for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow bowl, combine breadcrumbs, 1/4 cup Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
  3. Dip each chicken piece into the beaten egg, then dredge in the breadcrumb mixture, ensuring it's fully coated.
  4. Place the coated chicken pieces on the prepared baking sheet. Bake for 15-20 minutes, or until golden brown and cooked through.
  5. While the chicken bakes, prepare the sauce. In a blender or food processor, combine cottage cheese, marinara sauce, 2 tablespoons Parmesan cheese, and 1/2 teaspoon garlic powder. Blend until smooth and creamy. Season with salt and pepper to taste.
  6. Once the chicken is cooked, you can either toss it with the sauce in a skillet over low heat for a minute or two, or simply spoon the sauce over the chicken in the bowls.
  7. Assemble your bowls: divide the cooked pasta or zucchini noodles between two bowls. Top with the chicken and sauce. Sprinkle with shredded mozzarella cheese and garnish with fresh basil.

Notes

You can adjust the amount of marinara sauce in the cottage cheese mixture to your preference for a less or more tomato-forward sauce. For a spicier kick, add a pinch of red pepper flakes to the sauce.
