Ingredients
  

Salad
  • 1 can (15 oz) chickpeas rinsed and drained
  • 1 cup cottage cheese full fat
  • 1/4 cup red onion finely chopped
  • 1/4 cup celery finely chopped
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon juice fresh
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground

Method
 

  1. In a medium bowl, combine the rinsed and drained chickpeas, cottage cheese, chopped red onion, chopped celery, and chopped parsley.
  2. Add the fresh lemon juice, salt, and black pepper. Stir everything together until well combined.
  3. Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld.
  4. Serve chilled.

Notes

You can serve this salad on its own, with crackers, or in lettuce cups.
