- In a medium bowl, combine the rinsed and drained chickpeas, cottage cheese, chopped red onion, chopped celery, and chopped parsley.
- Add the fresh lemon juice, salt, and black pepper. Stir everything together until well combined.
- Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld.
- Serve chilled.

You can serve this salad on its own, with crackers, or in lettuce cups.
