Cinnamon Apple Breakfast Quinoa

Ingredients
  

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 large apple peeled, cored, and diced
  • 1 teaspoon cinnamon
  • 2 tablespoons maple syrup or to taste
  • 1/4 cup milk or non-dairy alternative

Method
 

  1. Combine the rinsed quinoa and water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed.
  2. Stir in the diced apple and cinnamon. Cook for another 5 minutes, or until the apple is tender.
  3. Remove from heat. Stir in the maple syrup and milk.
  4. Serve warm.

Notes

You can add nuts or seeds for extra crunch.
