- In a small bowl, whisk together 1/4 cup olive oil, 1/4 cup lime juice, minced garlic, chili powder, cumin, salt, and pepper. Place the flank steak in a large bowl or resealable bag and pour the marinade over it. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- Preheat your grill or grill pan to medium-high heat.
- Remove steak from marinade and discard the marinade. Grill steak for 4-6 minutes per side for medium-rare, or to your desired doneness.
- Let the steak rest for 5-10 minutes before slicing it thinly against the grain.
- While the steak rests, assemble the bowls. Divide the cooked rice among four bowls. Top with black beans, corn, cherry tomatoes, and red onion.
- Add the sliced steak to each bowl. Drizzle with 2 tablespoons of olive oil and 1/4 cup of fresh lime juice. Sprinkle with chopped cilantro.
