For the Banana Bread
  • 3 large ripe bananas mashed
  • 1/3 cup unsalted butter melted
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant espresso powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup chocolate chips optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas. Stir in the melted butter, sugar, egg, vanilla extract, and instant espresso powder until well combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, salt, and cocoa powder.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. If using, fold in the chocolate chips.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a stronger espresso flavor, you can dissolve the espresso powder in 1 tablespoon of hot water before adding it to the wet ingredients.
