- Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, mash the ripe bananas. Stir in the melted butter, sugar, egg, and vanilla extract.
- Dissolve the instant espresso powder in a tablespoon of hot water, then add it to the banana mixture.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the chocolate chips, if using.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a stronger espresso flavor, you can increase the amount of espresso powder. Ensure your bananas are very ripe for the best flavor and sweetness.
