Chocolate Espresso Banana Bread

Ingredients
  

For the Banana Bread
  • 3 ripe bananas mashed
  • 1/3 cup unsalted butter melted
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp instant espresso powder
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas. Stir in the melted butter, sugar, egg, and vanilla extract.
  3. Dissolve the instant espresso powder in a tablespoon of hot water, then add it to the banana mixture.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chocolate chips, if using.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For a stronger espresso flavor, you can increase the amount of espresso powder. Ensure your bananas are very ripe for the best flavor and sweetness.
