Chickpea, Beet and Feta Salad

Ingredients
  

  • 1 can (15 oz) chickpeas rinsed and drained
  • 2 medium beets cooked and diced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup red onion finely chopped
  • 2 tablespoons fresh parsley chopped
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large bowl, combine the chickpeas, diced beets, crumbled feta cheese, chopped red onion, and chopped parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or chill for later.

Notes

You can use pre-cooked beets from the grocery store to save time.
