Chicken Zucchini Bake

A simple and flavorful chicken and zucchini casserole.

Ingredients
  

For the Bake
  • 1 lb chicken breast cut into bite-sized pieces
  • 2 medium zucchini sliced
  • 1 can cream of mushroom soup 10.5 oz
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup bread crumbs
  • 2 tbsp butter melted
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the cooked chicken, sliced zucchini, cream of mushroom soup, and sour cream. Stir in salt and pepper.
  3. Pour the mixture into a greased 9x13 inch baking dish.
  4. In a small bowl, mix together the bread crumbs and melted butter. Sprinkle this mixture evenly over the top of the casserole.
  5. Bake for 30 minutes, or until the casserole is bubbly and the topping is golden brown.
  6. Sprinkle the shredded cheddar cheese over the top during the last 5 minutes of baking.

Notes

You can add other vegetables like chopped onions or bell peppers to the mix. Serve hot.
