Method
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry with paper towels. In a small bowl, mix together olive oil, oregano, salt, and pepper. Rub this mixture all over the chicken breasts.
- Place the seasoned chicken breasts in a baking dish.
- In another small bowl, combine the halved kalamata olives, crumbled feta cheese, minced garlic, chopped parsley, and fresh lemon juice. Stir to combine.
- Spoon the olive and feta mixture evenly over the chicken breasts.
- Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before serving.
