Chicken Wild Rice Casserole

Ingredients
  

For the Casserole
  • 2 cups cooked chicken shredded or diced
  • 1 cup cooked wild rice
  • 1 can cream of mushroom soup 10.5 ounce
  • 1 can cream of celery soup 10.5 ounce
  • 1/2 cup milk
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/2 cup sliced mushrooms
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup crushed butter crackers like Ritz
  • 2 tablespoons butter melted

Equipment

  • Large skillet
  • 9x13 inch baking dish

Method
 

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. In a large skillet, combine the cooked chicken, cooked wild rice, cream of mushroom soup, cream of celery soup, milk, chopped onion, chopped celery, and sliced mushrooms. Stir until well combined.
  3. Pour the mixture into the prepared 9x13 inch baking dish.
  4. In a small bowl, mix the crushed butter crackers with the melted butter. Sprinkle this mixture evenly over the top of the casserole.
  5. Bake for 30-40 minutes, or until the casserole is heated through and the topping is golden brown.
  6. Sprinkle the shredded cheddar cheese over the top during the last 5 minutes of baking.
  7. Let stand for a few minutes before serving.

Notes

You can add other vegetables like peas or carrots if you like. This casserole is best served warm.
