- Heat olive oil in a large skillet over medium-high heat. Add the chicken sausage and cook until browned. Remove sausage from skillet and set aside.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the orzo pasta and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes.
- Add the broccoli florets and cooked chicken sausage to the skillet. Stir to combine, cover, and cook for another 5-7 minutes, or until the orzo is tender and the broccoli is bright green.
- Remove from heat. Stir in the Parmesan cheese and fresh parsley. Season with salt and pepper to taste.
Notes
Serve immediately. You can add a squeeze of lemon juice before serving for extra brightness.
