Chicken Parm Cottage Bowl

Ingredients
  

For the Mashed Potatoes
  • 1 kg Potatoes peeled and quartered
  • 1/2 cup Milk warmed
  • 4 tbsp Butter
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
For the Chicken
  • 2 large Chicken breasts cut into 1-inch pieces
  • 1/2 cup Breadcrumbs
  • 1/4 cup Grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp Garlic powder
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 2 large Eggs beaten
  • 2 tbsp Olive oil
For the Sauce and Topping
  • 1.5 cups Marinara sauce
  • 1 cup Shredded mozzarella cheese
  • 1/4 cup Grated Parmesan cheese
  • 2 tbsp Fresh basil chopped, for garnish

Method
 

  1. Boil the potatoes in a saucepan until tender. Drain well.
  2. Mash the potatoes with warm milk, butter, salt, and pepper until smooth.
  3. In a shallow dish, combine breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
  4. Dip chicken pieces into the beaten eggs, then dredge in the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown and cooked through.
  6. Preheat your oven to 375°F (190°C).
  7. Spread mashed potatoes into the bottom of a baking dish.
  8. Top the potatoes with the cooked chicken pieces.
  9. Spoon marinara sauce over the chicken.
  10. Sprinkle mozzarella and Parmesan cheese over the sauce.
  11. Bake for 15-20 minutes, or until cheese is melted and bubbly.
  12. Garnish with fresh basil before serving.

Notes

You can use pre-made mashed potatoes to save time. Ensure chicken is cooked through before assembling the bowls.
