Method
- Cook the orzo pasta according to package directions. Drain and rinse with cold water. Set aside.
- In a large mixing bowl, combine the cooked orzo, shredded chicken, halved cherry tomatoes, chopped red onion, and chopped parsley.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
- Pour the dressing over the orzo and chicken mixture. Toss gently to combine.
- Serve immediately or chill for later. Enjoy!
Notes
You can add other vegetables like cucumber, bell peppers, or olives. Feta cheese also makes a great addition.
