Chicken Orzo Pasta Salad

Ingredients
  

For the Salad
  • 1 cup orzo pasta
  • 2 cups cooked chicken breast shredded or diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Equipment

  • Large pot
  • Colander
  • Large mixing bowl

Method
 

  1. Cook the orzo pasta according to package directions. Drain and rinse with cold water. Set aside.
  2. In a large mixing bowl, combine the cooked orzo, shredded chicken, halved cherry tomatoes, chopped red onion, and chopped parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
  4. Pour the dressing over the orzo and chicken mixture. Toss gently to combine.
  5. Serve immediately or chill for later. Enjoy!

Notes

You can add other vegetables like cucumber, bell peppers, or olives. Feta cheese also makes a great addition.
