Method
- Preheat your oven to 375°F (190°C).
- Cook the manicotti shells according to package directions until al dente. Drain and rinse with cold water.
- In a large bowl, combine the cooked chicken, ricotta cheese, Parmesan cheese, egg, parsley, garlic powder, salt, and pepper. Mix well.
- Stuff the cooked manicotti shells with the chicken and cheese mixture. Arrange the stuffed manicotti in a single layer in the 9x13 inch baking dish.
- Pour the Alfredo sauce evenly over the manicotti.
- Sprinkle the shredded mozzarella cheese over the top.
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for another 10 minutes, or until the cheese is melted and bubbly.
- Let stand for a few minutes before serving.
Notes
You can add a pinch of nutmeg to the ricotta mixture for extra flavor. Serve with a side salad and garlic bread.
