Chicken Manicotti Alfredo

A creamy and cheesy chicken manicotti baked in Alfredo sauce.

Ingredients
  

For the Manicotti
  • 14 oz Manicotti shells uncooked
  • 1 lb Cooked chicken shredded or diced
  • 15 oz Ricotta cheese
  • 1 cup Parmesan cheese grated
  • 1 large Egg
  • 1/4 cup Fresh parsley chopped
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
For the Sauce
  • 24 oz Alfredo sauce jarred or homemade
  • 1 cup Mozzarella cheese shredded

Equipment

  • 9x13 inch baking dish
  • Large skillet
  • Large pot

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Cook the manicotti shells according to package directions until al dente. Drain and rinse with cold water.
  3. In a large bowl, combine the cooked chicken, ricotta cheese, Parmesan cheese, egg, parsley, garlic powder, salt, and pepper. Mix well.
  4. Stuff the cooked manicotti shells with the chicken and cheese mixture. Arrange the stuffed manicotti in a single layer in the 9x13 inch baking dish.
  5. Pour the Alfredo sauce evenly over the manicotti.
  6. Sprinkle the shredded mozzarella cheese over the top.
  7. Cover the baking dish with foil and bake for 20 minutes.
  8. Remove the foil and bake for another 10 minutes, or until the cheese is melted and bubbly.
  9. Let stand for a few minutes before serving.

Notes

You can add a pinch of nutmeg to the ricotta mixture for extra flavor. Serve with a side salad and garlic bread.
