Chicken Cornbread Casserole

Ingredients
  

For the Chicken Mixture
  • 2 cups cooked chicken shredded or diced
  • 1 can cream of chicken soup 10.5 oz
  • 1/2 cup milk
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
For the Cornbread Topping
  • 1 box cornbread mix 8.5 oz
  • 1/3 cup milk
For the Mashed Potato Layer
  • 2 cups mashed potatoes prepared

  • Large mixing bowl

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the cooked chicken, cream of chicken soup, 1/2 cup milk, chopped onion, and chopped celery. Mix well.
  3. Spread the chicken mixture evenly in the bottom of a 9x13 inch baking dish.
  4. In a separate bowl, prepare the cornbread mix according to package directions, using the egg and 1/3 cup milk. Pour the cornbread batter over the chicken mixture.
  5. Bake for 25 minutes, or until the cornbread is golden brown.
  6. Remove the casserole from the oven. Carefully spread the prepared mashed potatoes over the cornbread topping.
  7. Return the casserole to the oven and bake for another 5-10 minutes, or until heated through.
  8. Let the casserole rest for 10 minutes before serving.

Notes

You can add a layer of shredded cheese between the chicken mixture and the cornbread for extra flavor.
