Method
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the cooked chicken, cream of chicken soup, 1/2 cup milk, chopped onion, and chopped celery. Mix well.
- Spread the chicken mixture evenly in the bottom of a 9x13 inch baking dish.
- In a separate bowl, prepare the cornbread mix according to package directions, using the egg and 1/3 cup milk. Pour the cornbread batter over the chicken mixture.
- Bake for 25 minutes, or until the cornbread is golden brown.
- Remove the casserole from the oven. Carefully spread the prepared mashed potatoes over the cornbread topping.
- Return the casserole to the oven and bake for another 5-10 minutes, or until heated through.
- Let the casserole rest for 10 minutes before serving.
Notes
You can add a layer of shredded cheese between the chicken mixture and the cornbread for extra flavor.
