- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken pieces to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Add the broccoli florets and chicken broth to the skillet. Cover and cook for 5-7 minutes, or until the broccoli is tender-crisp.
- Stir in the soy sauce and the cornstarch mixture. Bring to a simmer and cook, stirring, until the sauce thickens, about 1-2 minutes.
- Return the cooked chicken to the skillet and stir to coat with the sauce. Season with black pepper.
- Serve hot.

You can serve this chicken broccoli skillet on its own or over rice or quinoa for a more complete meal.
