Ingredients
  

For the Skillet
  • 1 lb Boneless, skinless chicken breasts Cut into 1-inch pieces
  • 1 tbsp Olive oil
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 4 cups Broccoli florets
  • 1/2 cup Chicken broth
  • 2 tbsp Soy sauce
  • 1 tsp Cornstarch Mixed with 2 tsp water
  • 1/4 tsp Black pepper

  • Cutting board

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Add the broccoli florets and chicken broth to the skillet. Cover and cook for 5-7 minutes, or until the broccoli is tender-crisp.
  6. Stir in the soy sauce and the cornstarch mixture. Bring to a simmer and cook, stirring, until the sauce thickens, about 1-2 minutes.
  7. Return the cooked chicken to the skillet and stir to coat with the sauce. Season with black pepper.
  8. Serve hot.
