Chicken Avocado Melt Sandwich

Ingredients
  

For the Sandwich
  • 2 slices bread your favorite kind
  • 1 boneless, skinless chicken breast chicken breast cooked and shredded or sliced
  • 1/2 avocado sliced
  • 2 slices cheese cheddar, provolone, or your favorite
  • 1 tablespoon butter softened
  • 1 teaspoon mayonnaise optional
  • salt salt to taste
  • black pepper black pepper to taste

Equipment

  • Grill pan or skillet
  • Knife
  • Cutting board

Method
 

  1. Spread butter on one side of each slice of bread. If using mayonnaise, spread it on the unbuttered side of one slice.
  2. Place one slice of bread, butter-side down, in a skillet or grill pan over medium heat.
  3. Layer the cheese, cooked chicken, avocado slices, salt, and pepper on the bread in the pan.
  4. Top with the second slice of bread, butter-side up.
  5. Grill for 4-5 minutes per side, until the bread is golden brown and the cheese is melted.
  6. Remove from the pan, slice in half, and serve immediately.

Notes

You can add other toppings like tomato slices or lettuce if desired. For a spicier kick, add a pinch of red pepper flakes.
