Ingredients
  

For the Chicken and Sweet Potatoes
  • 1 lb boneless, skinless chicken thighs cut into 1-inch pieces
  • 2 medium sweet potatoes peeled and cut into 1/2-inch cubes
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
For Serving
  • 3 cups cooked rice e.g., white or brown rice

Method
 

  1. In a large skillet, combine the chicken pieces, cubed sweet potatoes, olive oil, paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  2. Cook over medium-high heat for 20-25 minutes, stirring occasionally, until the chicken is cooked through and the sweet potatoes are tender.
  3. Serve the chicken and sweet potato mixture over the cooked rice.

Notes

You can add other vegetables like broccoli or bell peppers along with the sweet potatoes. Adjust seasonings to your preference.
