- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces to the skillet and season with paprika, garlic powder, salt, and pepper. Cook for 5-7 minutes, until browned on all sides.
- Add the cubed sweet potato to the skillet with the chicken. Stir to combine.
- Reduce heat to medium-low, cover, and cook for 15-20 minutes, or until the sweet potatoes are tender and the chicken is cooked through. Stir occasionally.
- Serve the chicken and sweet potato mixture over cooked rice.
Notes
You can add other vegetables like broccoli or bell peppers along with the sweet potatoes. Adjust seasonings to your preference.
