For the Chicken and Sweet Potatoes
  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 medium sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the chicken pieces and cubed sweet potatoes.
  3. Drizzle with olive oil and sprinkle with paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  4. Spread the mixture in a single layer on the prepared baking sheet.
  5. Bake for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender, flipping halfway through.
  6. Serve hot.

Notes

You can add other vegetables like broccoli or bell peppers to this dish.
