Ingredients
  

For the Meatloaf
  • 1 pound ground beef 80/20 recommended
  • 1/2 cup breadcrumbs plain
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup onion finely chopped
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Cheese Filling
  • 1/2 cup shredded cheddar cheese
  • 2 ounces cream cheese softened
For the Glaze
  • 1/4 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, Worcestershire sauce, salt, and pepper. Mix gently until just combined. Do not overmix.
  3. In a small bowl, mix together the shredded cheddar cheese and softened cream cheese until well combined.
  4. Take about 2 tablespoons of the meatloaf mixture and flatten it in your hand. Place about 1 teaspoon of the cheese mixture in the center. Carefully form the meatloaf mixture around the cheese to create a ball, ensuring the cheese is completely enclosed.
  5. Place the formed meatloaf bites on the prepared baking sheet.
  6. In a small bowl, whisk together the ketchup, brown sugar, and Dijon mustard for the glaze.
  7. Brush the tops of the meatloaf bites with the glaze.
  8. Bake for 20-25 minutes, or until the meatloaf is cooked through and the glaze is slightly caramelized.
  9. Let the meatloaf bites cool slightly before serving.

Notes

You can substitute other shredded cheeses like mozzarella or Monterey Jack for the cheddar. For a spicier kick, add a pinch of cayenne pepper to the cheese filling.
