Cheddar Bay Chicken Cobbler

Ingredients
  

For the Filling
  • 2 cups cooked chicken shredded or diced
  • 1 cup frozen mixed vegetables thawed
  • 1 can cream of chicken soup 10.5 ounce
  • 1/4 cup milk
For the Topping
  • 2 cups biscuit mix like Bisquick
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons melted butter

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the cooked chicken, mixed vegetables, cream of chicken soup, and 1/4 cup of milk. Stir until well combined.
  3. Pour the chicken mixture into the 9x13 inch baking dish and spread evenly.
  4. In a medium bowl, whisk together the biscuit mix and 1/2 cup of milk until just combined. Do not overmix.
  5. Gently drop spoonfuls of the biscuit batter over the chicken mixture.
  6. Sprinkle the shredded cheddar cheese over the biscuit topping.
  7. Bake for 30-35 minutes, or until the topping is golden brown and cooked through.
  8. Brush the melted butter over the hot topping immediately after removing from the oven.

Notes

You can add other seasonings like garlic powder or onion powder to the chicken mixture if desired.
