Ingredients

For the Bread
  • 300 g all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 75 g cheddar cheese grated
  • 2 tbsp fresh herbs chopped (e.g., chives, parsley, thyme)
  • 250 ml buttermilk

Equipment

  • Baking sheet
  • Large bowl

Method

  1. Preheat your oven to 200°C (400°F). Lightly grease a baking sheet.
  2. In a large bowl, whisk together the flour, baking soda, salt, and pepper.
  3. Stir in the grated cheddar cheese and chopped fresh herbs.
  4. Make a well in the center of the dry ingredients and pour in the buttermilk. Mix with a knife or spatula until just combined to form a soft dough.
  5. Turn the dough out onto a lightly floured surface and gently shape it into a round, flat loaf. Place the loaf on the prepared baking sheet.
  6. Cut a deep cross into the top of the loaf with a sharp knife.
  7. Bake for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  8. Let the bread cool on a wire rack before slicing and serving.

Notes

You can use any combination of your favorite herbs. Ensure the buttermilk is at room temperature for best results.
