Cheddar and Herb Soda Bread

Ingredients
  

For the Bread
  • 350 g all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 100 g cheddar cheese grated
  • 2 tbsp fresh mixed herbs chopped (e.g., parsley, chives, thyme)
  • 250 ml buttermilk

  • Large mixing bowl

Method
 

  1. Preheat your oven to 200°C (400°F). Lightly flour a baking sheet.
  2. In a large mixing bowl, combine the flour, baking soda, salt, and pepper.
  3. Stir in the grated cheddar cheese and chopped herbs.
  4. Make a well in the center of the dry ingredients and pour in the buttermilk. Mix with a knife or your hands until a soft, slightly sticky dough forms. Do not overmix.
  5. Turn the dough out onto the floured baking sheet and shape it into a round, flat loaf about 4-5 cm thick. Cut a deep cross into the top of the loaf with a sharp knife.
  6. Bake for 30-35 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.
  7. Transfer the bread to a wire rack to cool slightly before slicing and serving.

Notes

Serve warm with butter. This bread is best enjoyed fresh.
