- Heat olive oil in a large pot over medium heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
- Add onion, celery, and bell pepper to the pot. Cook until softened, about 5-7 minutes.
- Stir in minced garlic and Cajun seasoning. Cook for 1 minute until fragrant.
- Pour in chicken broth and add diced tomatoes and thyme. Bring to a boil.
- Return the browned chicken to the pot. Reduce heat, cover, and simmer for 20 minutes, or until chicken is cooked through and tender.
- Season with salt and black pepper to taste. Serve hot.
Notes
For a spicier soup, add a pinch of cayenne pepper. You can also add other vegetables like corn or peas.
