Cajun Chicken Soup

Ingredients
  

For the Soup
  • 1 tablespoon Olive oil
  • 1 pound Boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 medium Onion chopped
  • 2 stalks Celery chopped
  • 1 large Bell pepper chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Cajun seasoning
  • 6 cups Chicken broth
  • 1 can Diced tomatoes 14.5 ounce
  • 1/2 teaspoon Dried thyme

Equipment

  • Large pot
  • Cutting board
  • Knife

Method
 

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
  2. Add onion, celery, and bell pepper to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and Cajun seasoning. Cook for 1 minute until fragrant.
  4. Pour in chicken broth and add diced tomatoes and thyme. Bring to a boil.
  5. Return the browned chicken to the pot. Reduce heat, cover, and simmer for 20 minutes, or until chicken is cooked through and tender.
  6. Season with salt and black pepper to taste. Serve hot.

Notes

For a spicier soup, add a pinch of cayenne pepper. You can also add other vegetables like corn or peas.
