Method
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, flour, baking soda, and salt. Stir to mix.
- In a separate bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Stir in the chocolate chips and chopped nuts, if using.
- Drop rounded tablespoons of dough onto the prepared baking sheet, about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown. The centers may still look slightly soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cooled cookies in an airtight container at room temperature for up to 3 days.
