Ingredients
  

For the Cod
  • 1.5 pounds cod fillets skinless
  • 2 tablespoons butter melted
  • 1 tablespoon lemon juice
For the Topping
  • 1 cup breadcrumbs fresh or dried
  • 2 tablespoons butter melted
  • 2 tablespoons parsley chopped fresh
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Place the cod fillets in a lightly greased baking dish.
  3. In a small bowl, combine the melted butter and lemon juice. Brush this mixture over the cod fillets.
  4. In another small bowl, mix together the breadcrumbs, melted butter, parsley, salt, and pepper.
  5. Sprinkle the breadcrumb mixture evenly over the cod fillets.
  6. Bake for 20-25 minutes, or until the cod is opaque and flakes easily with a fork, and the topping is golden brown.
  7. Serve immediately.

Notes

You can add a splash of white wine to the baking dish before baking for extra flavor. Serve with your favorite side dishes like roasted vegetables or mashed potatoes.
