- Preheat your oven to 400°F (200°C).
- Place the cod fillets in a lightly greased baking dish.
- In a small bowl, combine the melted butter and lemon juice. Brush this mixture over the cod fillets.
- In another small bowl, mix together the breadcrumbs, melted butter, parsley, salt, and pepper.
- Sprinkle the breadcrumb mixture evenly over the cod fillets.
- Bake for 20-25 minutes, or until the cod is opaque and flakes easily with a fork, and the topping is golden brown.
- Serve immediately.
Notes
You can add a splash of white wine to the baking dish before baking for extra flavor. Serve with your favorite side dishes like roasted vegetables or mashed potatoes.
