Ingredients

For the Yogurt Bites
  • 2 cups Greek yogurt plain, full-fat recommended
  • 2 tablespoons Honey or maple syrup adjust to taste
  • 1/2 teaspoon Vanilla extract
For the Blueberry Swirl
  • 1/2 cup Fresh or frozen blueberries
  • 1 tablespoon Water

Equipment

  • Baking sheet
  • Parchment paper
  • Piping bag
  • Small round tip

Method

  1. Prepare the blueberry swirl: In a small saucepan, combine blueberries and water. Cook over medium heat until blueberries burst and the mixture thickens, about 5-7 minutes. Mash with a fork and let cool completely.
  2. In a bowl, mix together Greek yogurt, honey (or maple syrup), and vanilla extract until well combined.
  3. Line a baking sheet with parchment paper.
  4. Transfer the yogurt mixture to a piping bag fitted with a small round tip. Pipe small rounds onto the prepared baking sheet.
  5. Drizzle the cooled blueberry mixture over the yogurt bites. Use a toothpick to gently swirl the blueberry mixture into the yogurt.
  6. Freeze for at least 2 hours, or until firm.
  7. Once frozen, carefully remove the yogurt bites from the parchment paper. Serve immediately or store in an airtight container in the freezer.

Notes

For a smoother swirl, you can blend the blueberries with water before cooking. If you don't have a piping bag, you can use a spoon to drop small dollops of yogurt onto the baking sheet.
