- Prepare the blueberry swirl: In a small saucepan, combine blueberries and water. Cook over medium heat until blueberries burst and the mixture thickens, about 5-7 minutes. Mash with a fork and let cool completely.
- In a bowl, mix together Greek yogurt, honey (or maple syrup), and vanilla extract until well combined.
- Line a baking sheet with parchment paper.
- Transfer the yogurt mixture to a piping bag fitted with a small round tip. Pipe small rounds onto the prepared baking sheet.
- Drizzle the cooled blueberry mixture over the yogurt bites. Use a toothpick to gently swirl the blueberry mixture into the yogurt.
- Freeze for at least 2 hours, or until firm.
- Once frozen, carefully remove the yogurt bites from the parchment paper. Serve immediately or store in an airtight container in the freezer.
Notes
For a smoother swirl, you can blend the blueberries with water before cooking. If you don't have a piping bag, you can use a spoon to drop small dollops of yogurt onto the baking sheet.
