BLT Chicken Salad

Ingredients
  

For the Chicken Salad
  • 2 cups cooked chicken shredded or diced
  • 4 slices bacon cooked and crumbled
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley chopped
  • to taste salt
  • to taste black pepper
Optional Additions
  • 1/4 cup shredded lettuce
  • 1 tablespoon lemon juice

Method
 

  1. In a large bowl, combine the cooked chicken, crumbled bacon, halved cherry tomatoes, chopped celery, and chopped red onion.
  2. In a small bowl, whisk together the mayonnaise, Dijon mustard, chopped parsley, salt, and pepper. If using, add lemon juice.
  3. Pour the dressing over the chicken mixture and stir gently to combine. If using, fold in the shredded lettuce.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled on bread, in lettuce cups, or with crackers.

Notes

You can adjust the amount of mayonnaise and Dijon mustard to your preference. This chicken salad is great for sandwiches, wraps, or as a topping for salads.
