Blackberry, Avocado & Arugula Salad

Ingredients
  

For the Salad
  • 5 oz Arugula
  • 1 Avocado ripe, sliced
  • 1 cup Blackberries
  • 1/4 cup Red onion thinly sliced
  • 1/4 cup Pecans toasted
For the Dressing
  • 3 tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • 1 tsp Honey
  • 1/2 tsp Dijon mustard
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper

Method
 

  1. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Set aside.
  2. In a large bowl, combine the arugula, sliced avocado, blackberries, red onion, and toasted pecans.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Serve immediately.

Notes

You can substitute walnuts for pecans if desired. For a heartier salad, add grilled chicken or shrimp.
