Black Beans and Rice Sausage

Ingredients
  

For the Dish
  • 1 tablespoon Olive oil
  • 1 pound Smoked sausage sliced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 (15 ounce) can Black beans rinsed and drained
  • 1.5 cups Cooked rice
  • 1 cup Chicken broth
  • 1 teaspoon Cumin
  • 1/2 teaspoon Chili powder
  • Salt to taste Salt
  • Black pepper to taste Black pepper

Equipment

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced sausage and cook until browned, about 5-7 minutes.
  3. Add the chopped onion and cook until softened, about 5 minutes.
  4. Stir in the minced garlic and cook for 1 minute more until fragrant.
  5. Add the rinsed and drained black beans, cooked rice, chicken broth, cumin, and chili powder. Stir to combine.
  6. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, or until heated through and flavors have melded.
  7. Season with salt and black pepper to taste.
  8. Serve hot.

Notes

You can add other vegetables like bell peppers or corn for extra flavor and color. Adjust the chili powder to your spice preference.
