- Heat olive oil in a large skillet over medium-high heat.
- Add the sliced sausage and cook until browned, about 5-7 minutes.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the rinsed and drained black beans, cooked rice, chicken broth, cumin, and chili powder. Stir to combine.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, or until heated through and flavors have melded.
- Season with salt and black pepper to taste.
- Serve hot.
Notes
You can add other vegetables like bell peppers or corn for extra flavor and color. Adjust the chili powder to your spice preference.
