Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas with a fork until mostly smooth. You can leave a few small lumps if you prefer texture.
  3. Stir the melted butter and sugar into the mashed bananas. Mix in the egg and vanilla extract until just combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients. Mix with a spatula until the flour streaks disappear. Do not overmix the batter.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before carefully removing it to a wire rack to cool completely before slicing.

Notes

For extra flavor, you can add 1/2 cup of chopped walnuts or chocolate chips to the batter before baking. If your bananas are not very ripe, the bread may be less sweet.
