Method
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, combine the mashed bananas, melted butter, egg, and vanilla extract. Mix until just combined.
- In a separate medium bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon, if using.
- Add the dry ingredients to the wet ingredients. Mix with a spatula until the flour streaks mostly disappear. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely before slicing.
Notes
For a richer flavor, you can substitute half of the granulated sugar with brown sugar. If you prefer a less dense bread, you can add 1/4 cup of milk to the wet ingredients.
