Method
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until combined.
- Add the lightly beaten eggs, vanilla extract, and mashed bananas to the sugar mixture. Mix until just combined.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Add the dry ingredients to the wet ingredients. Mix with a spatula until just incorporated. Do not overmix the batter.
- Pour the batter into the prepared loaf pan.
- Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
If your bananas are not very ripe (brown or black spots), the bread may not be as moist. You can add 1/2 cup of chocolate chips or chopped nuts to the batter before baking if you want extra additions.
