Ingredients

  • 8 Chicken thighs, skin-on, bone-in (about 3 pounds)
Spice Rub
  • 2 teaspoons Paprika
  • 2 teaspoons Kosher salt
  • 1.5 teaspoons Garlic powder
  • 1 teaspoon Onion powder
  • 1/2 teaspoon Black pepper
Sauce
  • 3/4 cup BBQ sauce Your favorite brand or 2 cups homemade, plus more for serving

Equipment

  • Baking sheet
  • Oven

Method

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a baking sheet with foil for easier cleanup.
  2. In a small bowl, mix together the paprika, kosher salt, garlic powder, onion powder, and black pepper to create the spice rub.
  3. Pat the chicken thighs dry with paper towels. Rub the spice mixture evenly over all surfaces of the chicken thighs.
  4. Place the seasoned chicken thighs skin-side up on the prepared baking sheet.
  5. Bake for 25 minutes.
  6. Remove the chicken from the oven and brush the tops generously with the BBQ sauce.
  7. Return the chicken to the oven and bake for another 15 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C) and the sauce is slightly caramelized.
  8. Let the chicken rest for a few minutes before serving with extra BBQ sauce, if desired.

Notes

Baking time may vary based on the size of your chicken thighs. Use a meat thermometer to check for doneness.
