BBQ Chicken Sweet Potato

Ingredients
  

For the Sweet Potatoes
  • 2 large sweet potatoes peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Chicken
  • 1.5 pounds boneless, skinless chicken breasts cut into 1-inch pieces
  • 1/2 cup BBQ sauce
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them in a single layer on one half of the prepared baking sheet.
  3. In the same bowl, combine the chicken pieces with BBQ sauce, paprika, and garlic powder. Mix well to coat the chicken.
  4. Arrange the seasoned chicken pieces in a single layer on the other half of the baking sheet with the sweet potatoes.
  5. Bake for 30-40 minutes, or until the sweet potatoes are tender and the chicken is cooked through, flipping halfway through the cooking time.
  6. Serve hot.

Notes

You can adjust the amount of BBQ sauce to your preference. Feel free to add other seasonings like onion powder or chili powder to the chicken.
