Bang Bang Salmon Bites

These Bang Bang Salmon Bites are a quick and flavorful appetizer or main course. Crispy on the outside and tender on the inside, they are coated in a creamy, spicy Bang Bang sauce.

Ingredients
  

For the Salmon Bites
  • 1.5 lb salmon fillet skinless, cut into 1-inch cubes
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 2 large eggs beaten
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp Sriracha or more, to taste
  • 1 tsp rice vinegar
  • 1 clove garlic minced

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine panko breadcrumbs, paprika, garlic powder, salt, and pepper.
  3. In another shallow dish, whisk the eggs.
  4. Dredge each salmon cube first in the flour, then dip into the beaten eggs, and finally coat thoroughly with the panko mixture. Place the coated salmon bites on the prepared baking sheet.
  5. Bake for 12-15 minutes, or until the salmon is cooked through and the coating is golden brown and crispy.
  6. While the salmon is baking, prepare the Bang Bang sauce. In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, rice vinegar, and minced garlic until smooth.
  7. Once the salmon bites are cooked, toss them gently in the Bang Bang sauce until evenly coated. Serve immediately.

Notes

Garnish with chopped green onions or sesame seeds for extra flavor and visual appeal. These are best served fresh.
