- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, combine panko breadcrumbs, paprika, garlic powder, salt, and pepper.
- In another shallow dish, whisk the eggs.
- Dredge each salmon cube first in the flour, then dip into the beaten eggs, and finally coat thoroughly with the panko mixture. Place the coated salmon bites on the prepared baking sheet.
- Bake for 12-15 minutes, or until the salmon is cooked through and the coating is golden brown and crispy.
- While the salmon is baking, prepare the Bang Bang sauce. In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, rice vinegar, and minced garlic until smooth.
- Once the salmon bites are cooked, toss them gently in the Bang Bang sauce until evenly coated. Serve immediately.
Notes
Garnish with chopped green onions or sesame seeds for extra flavor and visual appeal. These are best served fresh.
