Bang Bang Chicken Bowl

Ingredients
  

For the Chicken
  • 1 lb Chicken breast cut into bite-sized pieces
  • 1 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
For the Bang Bang Sauce
  • 1/2 cup Mayonnaise
  • 2 tbsp Sweet chili sauce
  • 1 tbsp Sriracha or to taste
  • 1 tsp Rice vinegar
For Serving
  • 2 cups Cooked rice
  • 1/2 cup Shredded lettuce
  • 1/4 cup Chopped green onions
  • 1 tbsp Sesame seeds optional

Method
 

  1. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and rice vinegar for the Bang Bang sauce. Set aside.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken pieces with salt and pepper.
  3. Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
  4. Pour the Bang Bang sauce over the cooked chicken in the skillet. Stir to coat the chicken evenly and cook for another 1-2 minutes until the sauce thickens slightly.
  5. To assemble the bowls, divide the cooked rice between two bowls. Top with shredded lettuce, the saucy chicken, and chopped green onions.
  6. Garnish with sesame seeds, if desired.

Notes

You can adjust the spice level by adding more or less sriracha. Other vegetables like shredded carrots or sliced cucumbers can also be added.
