Ingredients
  

  • 4 6-ounce fillets Cod fillets
  • 2 tablespoons Olive oil
  • 1 lemon Juiced
  • 1 lemon Thinly sliced
  • 2 cloves Garlic minced
  • 1/4 cup Fresh parsley chopped
  • 1/4 cup Fresh dill chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the cod fillets in a baking dish.
  3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, chopped dill, salt, and pepper.
  4. Pour the olive oil mixture over the cod fillets, ensuring they are evenly coated.
  5. Top each fillet with a slice of lemon.
  6. Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  7. Serve immediately.

Notes

You can add other herbs like thyme or rosemary. Serve with roasted vegetables or a side salad.
