- Cook the chopped bacon in a large pot over medium heat until crispy. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate, leaving the bacon grease in the pot.
- Add the chopped onion to the pot with the bacon grease. Cook until softened, about 5-7 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Pour in the chicken broth and bring to a simmer. Stir in the heavy cream.
- Add the gnocchi to the simmering soup. Cook according to package directions, usually about 3-5 minutes, until they float to the surface.
- Reduce the heat to low. Stir in the shredded cheddar cheese until melted and the soup is smooth. Season with salt and pepper to taste.
- Ladle the soup into bowls. Top with the reserved crispy bacon and chopped chives, if desired.
Notes
For a thicker soup, you can simmer it uncovered for a few extra minutes after adding the gnocchi. You can also add other vegetables like carrots or celery with the onions.
