Bacon Cheddar Gnocchi Soup

Ingredients
  

For the Soup
  • 4 slices Bacon chopped
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 package Gnocchi 16-17 oz
  • 1.5 cups Cheddar cheese shredded
  • 1/2 teaspoon Salt or to taste
  • 1/4 teaspoon Black pepper or to taste
Optional Garnishes
  • 1/4 cup Chives chopped

Equipment

Method
 

  1. Cook the chopped bacon in a large pot over medium heat until crispy. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate, leaving the bacon grease in the pot.
  2. Add the chopped onion to the pot with the bacon grease. Cook until softened, about 5-7 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream.
  4. Add the gnocchi to the simmering soup. Cook according to package directions, usually about 3-5 minutes, until they float to the surface.
  5. Reduce the heat to low. Stir in the shredded cheddar cheese until melted and the soup is smooth. Season with salt and pepper to taste.
  6. Ladle the soup into bowls. Top with the reserved crispy bacon and chopped chives, if desired.

Notes

For a thicker soup, you can simmer it uncovered for a few extra minutes after adding the gnocchi. You can also add other vegetables like carrots or celery with the onions.
