Apple Pie Cheesecake Bars

These bars combine the creamy texture of cheesecake with the comforting flavors of apple pie.

Ingredients
  

For the Crust
  • 1.5 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
For the Cheesecake Filling
  • 24 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
For the Apple Topping
  • 2 medium apples, peeled, cored, and diced such as Honeycrisp or Gala
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Equipment

  • 9x13 inch baking pan
  • Mixing bowls
  • Electric mixer

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press the mixture evenly into the bottom of the prepared pan.
  3. Bake the crust for 8-10 minutes. Remove from oven and let cool slightly.
  4. In a large bowl, beat the cream cheese and 3/4 cup granulated sugar with an electric mixer until smooth.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. Pour the cheesecake filling over the prepared crust.
  7. In a separate small bowl, toss the diced apples with brown sugar, cinnamon, and lemon juice.
  8. Scatter the apple mixture evenly over the cheesecake filling.
  9. Bake for 30-35 minutes, or until the edges are set and the center is almost set.
  10. Let the bars cool completely in the pan on a wire rack. Then, refrigerate for at least 2 hours before cutting into bars.

Notes

For best results, ensure your cream cheese is fully softened before mixing. You can also add a pinch of nutmeg to the apple topping for extra flavor.
