Method
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a medium bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press the mixture evenly into the bottom of the prepared pan.
- Bake the crust for 8-10 minutes. Remove from oven and let cool slightly.
- In a large bowl, beat the cream cheese and 3/4 cup granulated sugar with an electric mixer until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Pour the cheesecake filling over the prepared crust.
- In a separate small bowl, toss the diced apples with brown sugar, cinnamon, and lemon juice.
- Scatter the apple mixture evenly over the cheesecake filling.
- Bake for 30-35 minutes, or until the edges are set and the center is almost set.
- Let the bars cool completely in the pan on a wire rack. Then, refrigerate for at least 2 hours before cutting into bars.
Notes
For best results, ensure your cream cheese is fully softened before mixing. You can also add a pinch of nutmeg to the apple topping for extra flavor.
