Apple Dapple Cake

Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 2 large eggs
  • 1 cup vegetable oil
  • 0.5 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups peeled and chopped apples about 2 medium apples
For the Caramel Glaze
  • 0.5 cup butter
  • 1 cup packed brown sugar
  • 0.25 cup milk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the eggs, vegetable oil, buttermilk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the chopped apples.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. While the cake is baking, prepare the glaze. In a small saucepan, melt the butter over medium heat. Stir in the brown sugar and milk. Bring to a boil, then reduce heat and simmer for 2 minutes, stirring constantly.
  9. Remove the saucepan from the heat and stir in the vanilla extract.
  10. Once the cake is out of the oven, immediately pour the hot glaze evenly over the top.
  11. Let the cake cool in the pan before slicing and serving.

Notes

This cake is best served warm. You can also add chopped walnuts or pecans to the batter for extra texture.
