Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, beat the eggs, then whisk in the vegetable oil, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the chopped apples.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
  9. While the cake cools, prepare the frosting. In a medium bowl, beat the softened cream cheese and butter until smooth.
  10. Gradually add the powdered sugar, mixing until well combined and smooth. Stir in the vanilla extract.
  11. Once the cake is completely cool, spread the cream cheese frosting evenly over the top.

Notes

For a richer flavor, you can add chopped walnuts or pecans to the cake batter. Store any leftover cake in an airtight container in the refrigerator.
