- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, whisk together the flour, granulated sugar, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, beat the eggs, then whisk in the vegetable oil, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Fold in the chopped apples.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
- While the cake cools, prepare the frosting. In a medium bowl, beat the softened cream cheese and butter until smooth.
- Gradually add the powdered sugar, mixing until well combined and smooth. Stir in the vanilla extract.
- Once the cake is completely cool, spread the cream cheese frosting evenly over the top.
Notes
For a richer flavor, you can add chopped walnuts or pecans to the cake batter. Store any leftover cake in an airtight container in the refrigerator.
