Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, whisk together the melted butter and eggs. Stir in the vanilla extract and sugar.
  3. In a separate bowl, combine the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  4. In a small bowl, toss the diced apples with lemon juice, sugar, and cinnamon.
  5. Spread half of the brownie batter into the prepared baking pan. Layer the apple mixture evenly over the batter. Top with the remaining brownie batter, spreading it gently to cover the apples.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  7. Let the brownies cool completely in the pan before cutting into squares.

Notes

You can add chocolate chips to the brownie batter for extra richness. Serve warm or at room temperature.
