Ingredients

For the Chicken
  • 1.5 lbs boneless, skinless chicken thighs cut into 1-inch pieces
For the Teriyaki Sauce
  • 1/2 cup soy sauce or tamari
  • 1/4 cup brown sugar packed
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 1 tbsp cornstarch mixed with 2 tbsp water

Equipment

  • Air fryer
  • Bowl

Method

  1. In a bowl, whisk together all ingredients for the teriyaki sauce except the cornstarch slurry. Add the chicken pieces and toss to coat evenly. Let marinate for at least 10 minutes.
  2. Preheat your air fryer to 400°F (200°C).
  3. Add the marinated chicken to the air fryer basket in a single layer. Cook for 10-12 minutes, flipping halfway through, until the chicken is cooked through and slightly caramelized.
  4. While the chicken is cooking, pour the remaining marinade into a small saucepan. Add the cornstarch slurry and bring to a simmer over medium heat, stirring constantly, until the sauce thickens. This should take about 1-2 minutes.
  5. Once the chicken is cooked, toss it with the thickened teriyaki sauce. Serve immediately.

Notes

Serve this teriyaki chicken over rice with steamed vegetables for a complete meal. Garnish with sesame seeds and sliced green onions if desired.
