Method
- Preheat your air fryer to 380°F (190°C).
- Prepare three shallow dishes. Place flour in the first, beaten eggs in the second, and a mixture of panko breadcrumbs, Parmesan cheese, oregano, garlic powder, salt, and pepper in the third.
- Dredge each chicken cutlet first in the flour, then in the egg, and finally coat thoroughly with the breadcrumb mixture.
- Lightly brush the coated chicken cutlets with olive oil.
- Place the chicken cutlets in the air fryer basket in a single layer, working in batches if necessary. Cook for 10-12 minutes, flipping halfway through, until golden brown and cooked through.
- Remove the chicken from the air fryer. Top each piece with marinara sauce and mozzarella cheese. Return to the air fryer for 2-3 minutes, or until the cheese is melted and bubbly.
- Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley.
