Ingredients

For the Chicken
  • 2 large chicken breasts cut in half horizontally
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for brushing
For Serving
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley

Equipment

  • Air fryer
  • Shallow dishes
  • Tongs

Method

  1. Preheat your air fryer to 380°F (190°C).
  2. Prepare three shallow dishes. Place flour in the first, beaten eggs in the second, and a mixture of panko breadcrumbs, Parmesan cheese, oregano, garlic powder, salt, and pepper in the third.
  3. Dredge each chicken cutlet first in the flour, then in the egg, and finally coat thoroughly with the breadcrumb mixture.
  4. Lightly brush the coated chicken cutlets with olive oil.
  5. Place the chicken cutlets in the air fryer basket in a single layer, working in batches if necessary. Cook for 10-12 minutes, flipping halfway through, until golden brown and cooked through.
  6. Remove the chicken from the air fryer. Top each piece with marinara sauce and mozzarella cheese. Return to the air fryer for 2-3 minutes, or until the cheese is melted and bubbly.
  7. Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley.
